About Nicole

Nicole initially made her mark on London while working as head chef of Nopi​ one of Yotam Ottolenghi central London (Soho) restaurants. 

 

In reaction to a tweet by Henry Dimbleby, co-founder of the fast food restaurant chain Leon and architect of the School Food Plan, Nicole took up a co-founder role with school food.

Since 2014 we have been building a programme that now has us supporting a great team of 20 chefs (from the likes of St John's and Petersham) currently cooking in 25 schools (Primary and Secondary) across London.

 

We are feeding 9,000 children and linking the food served with the cooking curriculum - the children are pickling foods, making kimchi and learning how to cook on fire on a daily basis.

 

We recently linked up with the Felix Project supplying lessons on food waste in schools where Felix deliver assemblies and food waste boxes to parents whilst parents and children learn to make their own bread and butter and learn how to use the food they are given.

 

We are in the final stages of building the Hackney School of Food which will have a fire pit and a smoker in the gardens as well as orchards and beehives and will be open to all the community and schools for all day lessons.
